Tabaiba

Tabaiba is a native shrub that inhabits the island, with deep green leaves and a woody structure. Its presence on the volcanic cones is a tribute to the power of life reclaiming what fire once took. It creates a landscape of brutal beauty, an aesthetic language where the arid and the fertile meet. That's why Tabaiba gives its name to our first dry wine, a tribute to that power that springs forth in the unexpected. Only 1,596 bottles were created to reclaim for life what seemed lost.

Volcanic Malvasia 95%, Listan Blanco 5%

Traditionally cultivated vineyards, pits formed in volcanic ash and highly evolved soils, rotted in organic matter, using local varieties under organic management.

Soil: Volcanic, evolved, covered by Rofe or Lapilli.
Altitude: 250–300 m.a.s.l.

Alcoholic fermentation: in a concrete egg with native yeast.
Aged in a concrete egg for 10 months, 70% and 30% stainless steel. Light bottle aging for 7-8 months. Bottled without fining or stabilization.
Alcohol content: 12%.
Production: 1,596 numbered bottles. 750 ml.

Appearance: Pale yellow. May contain natural precipitation.
Nose: Aromas of flint, citrus, and well-integrated ripe fruit.
Taste: Smooth, fresh wine with a touch of salinity, long-lasting, and persistent.
Recommended serving temperature: 12°C
